cinderella's pumpkin break

As part of a unit study on princesses in fairy tales, we made some pumpkin bread - Cinderella's pumpkin bread (she had to do something with all those shattered pieces!).

Organic pumpkin - it does a body good!
The finished product...with a few pieces missing. Kind of like Cinderella's glass slipper.
And, the recipe (adapted from Better Homes and Gardens)

Cinderella's Pumpkin Bread (9.2.7.12 - I need to veganize this!)
2 c. flour
1 c. turbinado sugar
1 T baking powder
1 tsp. cinnamon
scant 1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. nutmeg
1/8 tsp. ginger
1 c. canned organic pumpkin
1/c. unsweetened soy milk
2 eggs
1/3 c. veggie oil
1/2 c. raisins.
Mix all the ingredients, except the raisins, together until combined. Stir in raisins. Pour into greased bread tin and put in 350 degree oven for 60-65 minutes.
